Heavenly Chocolate Cupcakes

 

Chocolate Cupcakes  (yield 18 Cupcakes)

  • 1/2 cup plus 3tbsp (2 1/4 oz by weight) Dutch Processed Cocoa Powder
  • 1 cup Boiling water
  • 3 whole large eggs
  • 2 1/4 tsp vanilla
  • 2 1/4 cups plus 2 tsp of Sifted cake flower (sift before measuring)
  • 1 1/2 cups Sugar
  • 1 tbsp Baking powder
  • 3/4 tsp Salt
  • 1 cup softened unsalted butter

Directions:

  1. Preheat oven to 350 degrees.  Line cupcake pan with liners, using two pans if necessary.  In a medium bowl, whip together the cocoa and boiling water until smooth.  Set aside.  In another medium bowl, lightly combine the eggs, 1/4 of the cocoa misture and vanilla.  Set aside.
  2. Sift the remaining dry ingredients onto a sheet of parchment paper.  Gently pour the dry ingredients into a mixing bowl.  Using paddle attachment of your mixer, lightly combine the dry ingredients on low speed for 30 seconds.
  3. Add the butter and remaining cocoa mixture.  Mix on low speed until the dry ingredients are mositened.  Increase the speed to medium and beat for 1 1/2 minutes to incorporate air and develop the structure of the cake.  Turn off the machine and scrape down the sides and bottom of the mixing bowl.
  4. Gradually add the egg mixture in 3 batches, beating for 20 seconds after each addition.  Scrape down the sides and bottom of the bowl before the next addition of the egg mixture.
  5. Scrape the batter into the paper cups, filling them 2/3 full.  Bake for 20-25 minutes, or until a cake tester (toothpick) comes out with a few crumbs adhering to the tester.

I did try this recipe as directed, and they turned out fluffy and delicious!  I topped this recipe with Ghirardelli Cocoa powder and chocolate shavings for those chocolate lovers!

    I tried this recipe and they came out very bitter tasting, not sweet at all. I would not recommend this recipe.
