Halloween Cupcakes

 

Sweet, spicy pumpkin cupcakes topped with pretty white and bittersweet chocolate cobwebs are definitely a treat rather than a trick.  You can let the topping set completely if you like, but they’re so much better when its still soft.  Around October you should be able to find spooky paper liners in specialist kitchen shops.

 

Halloween Cupcakes

  • 1/2 cup packed brown sugar
  • 1/2 cup sunflower oil
  • 2 eggs
  • 1 cup grated pumpkin or butternut squash
  • grated peel of 1 unwaxed lemon
  • 1 cup self-rising flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon

To Decorate

  • 5 oz. white chocolate, chopped
  • 1 oz. bittersweet chocolate

a 12-cup cupcake pan, lined with paper liners.  Makes 12

Preheat the oven to 350.

Put the sugar in a bowl and break up with the back of a fork, then beat in the oil and eggs.  Fold in the grated pumpkin and lemon peel.  Combine the flour, baking powder, and cinnamon in a bowl, then sift into the mixture and fold in.

Spoon the mixture into the paper liners and bake in the preheated oven for about 18 minutes until risen and a skewer inserted in the center comes out clean.  Transfer to a wire rack to cool.

To decorate, put the white and bittersweet chocolates in seperate heatproof bowls set over pans gently simmering water.  Do not let the bowls touch the water.  Leave until almost melted.  Remove from the heat and let cool for about 5 minutes, then spoon the white chocolate over the cupcakes.

Cut a large square of parchment paper and fold into eights to make a cone and tape together. Spoon the dark chocolate in to the coneand snip the tip off so that you can pipe a thin line of chocolate.  Put a dot of chocolate in the center of each cupcake, then pipe three concentric circles around the dot.

Using a skewer, draw a line from the central dot to the outside edge of the cupcake and repeat about eight times all the way round to create a spiders web pattern.  Serve while the chocolate is still slightly soft and gooey.
