Paula Abdul’s Very Vanilla CupCakes

 

Life & Style Magazine asked Paula Abdul what was her secret ingredient?  She replied, “I really like baking! What’s the secret ingredients? Love!!”

Ingredients (makes 12)

  • 1 1/2 cups all-purpose flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 egg yolk
  • 2 tsp. vanilla extract
  • 1/2 cup milk

Directions

  1. Whisk together flour, baking powder and salt.
  2. In another bowl, beat butter with a mixer on high until fluffy.  Gradually beat in sugar.  Reduce speed to medium, beat in eggs one at a time, then add the egg yolk and vanilla.  Reduce speed to low and alternate beating in flour misture and milk until blended.
  3. Fill muffin tins with paper liners.  Spoon batter into tins, about 3/4 full each.
  4. Preheat oven to 350 degrees.  Bake 20 minutes until cupcakes tops are lightly golden.  Cool 15 minutes in the tins on a wire rack.  Add frosting as desired.
